How to Make Homemade Ice Cream

If you’ve ever wondered how to make homemade ice cream from the garden, Mr Fothergill’s has the recipe you need – no ice cream maker required!

Ingredients

  • 2 cups of thickened cream

  • 1 cup of sweetened condensed milk

  • 1 tsp of vanilla extract (optional)

Method

In a large bowl, beat the thickened cream until stiff peaks form (approximately 3-4 minutes with an electric beater). Next, gently fold in the sweetened condensed milk until smooth and combined, and add vanilla extract. Finally, pour the mixture into a freezer-safe container, cover it, and freeze for at least six hours. Then, enjoy.

Adding Your Garden-Grown Flavours

  • Strawberries: Wash, hull, and mash your strawberries. After whipping the cream and folding in the sweetened condensed milk, gently fold in the prepared strawberries.

  • Mint: Warm 1 cup of the thickened cream in a saucepan until it just begins to steam. Add one packed cup of fresh mint leaves. Cover and let steep for 30–60 minutes. Strain the mint out and chill the infused cream thoroughly.

  • Lavender: Stir in 1–2 tablespoons of fresh lavender buds. Remove from heat, cover, and let steep for 15–30 minutes, depending on how strong you want the flavour. Strain the lavender through a fine-mesh sieve.

  • Passionfruit: Scoop out the pulp from 4–6 passionfruits. After beating the cream with an electric beater and folding in the sweetened condensed milk, gently fold in the prepared passionfruit. If you're only using the juice from the passionfruit, you can stir it in thoroughly. If using the pulp with seeds, fold gently to keep the swirl effect.
