How to make Ice Cream – no ice cream maker needed!
Ingredients
2 cups thickened cream
1 cup sweetened condensed milk
Optional ingredient: 1 tsp vanilla extract
Method
1. In a large bowl, beat the cream until stiff peaks form (approximately 3-4 minutes with an electric beater).
2. Gently fold in the sweetened condensed milk until smooth and combined, if using vanilla extract, add it in now.
3. Pour the mixture into a freezer safe container, cover and freeze for at least 6 hours or overnight.
4. Scoop and enjoy.
STRAWBERRY ICE CREAM
Follow steps 1 & 2 in original ice cream recipe above then:
🍓 When to Add Fresh Strawberries:
Step 1: Prepare the Strawberries
• Wash, hull, and finely chop or mash 1 to 1½ cups of fresh strawberries.
• Optional: Cook the strawberries down slightly in a pan with 1–2 tablespoons of sugar and 1 tablespoon of lemon juice for 5–7 minutes, then cool — this prevents icy chunks and intensifies flavour.
Step 2: Add to the Mixture
• After whipping the cream and folding in the sweetened condensed milk (and optional vanilla), gently fold in the prepared strawberries.

MINT ICE CREAM
🌿 When & How to Add Fresh Mint Leaves to Ice Cream:
Step 1: Infuse the Cream
• Warm 1 cup of the thickened cream (from your total 2 cups in standard ice cream recipe) in a saucepan until it just begins to steam (don’t boil).
• Add 1 packed cup of fresh mint leaves (washed and torn slightly).
• Cover and let steep for 30–60 minutes.
• Strain the mint out and chill the infused cream thoroughly (it must be cold before whipping).
Step 2: Proceed With the Ice Cream Recipe
• Once the mint-infused cream is fully chilled, add it to the remaining 1 cup of thickened cream and beat with an electric beater until stiff peaks form.
• Fold in the sweetened condensed milk.
• Optional: Add choc chips for a scrumptious mint choc chip ice cream.
• Freeze for 6 hours or overnight.

LAVENDER ICE CREAM
🪻When & How to Add Fresh Lavender to Ice Cream
Step 1: Infuse the Cream
• Warm 1 cup of the thickened cream (from the total 2 cups in standard ice cream recipe) in a saucepan over low heat until steaming.
• Stir in 1–2 tablespoons of fresh lavender buds
• Remove from heat, cover, and let steep for 15–30 minutes depending on how strong you want the flavour.
• Strain out the lavender with a fine mesh sieve.
• Chill the cream thoroughly in the fridge, it needs to be cold before whipping.
Step 2: Proceed with the ice cream recipe
• With an electric beater, beat the infused (and chilled) cream with the remaining 1 cup of cream until stiff peaks form.
• Fold in 1 cup of sweetened condensed milk.
• Optional: Add a drop of natural purple food colouring for appearance.
• Freeze for 6 hours or overnight.
Step 3: Scoop & Enjoy!
PASSIONFRUIT ICE CREAM
When & How to Add Fresh Passionfruit to Ice Cream
Step 1: Prepare the Passionfruit
• Scoop out the pulp from 4–6 passionfruit's (about ½ to ¾ cup).
• You can use it with or without seeds:
• For no seeds: press the pulp through a fine sieve to extract the juice.
• For crunch: leave the seeds in.
Step 2: Add to the Mixture
• After beating the cream with an electric beater and folding in the sweetened condensed milk, gently fold in the prepared passionfruit.
• If using juice only from the passionfruit, you can stir it in completely.
• If using the pulp with seeds, fold gently to keep the swirl effect
