Soup Paysanne

A hearty and warming winter soup that almost makes a meal in itself! Ideal for the colder months, this tasty and delicious soup makes the best of fresh garden vegetables, full of flavour, colour and healthy goodness!

Ingredients List:
  • 1 large onion, chopped
  • 2 large carrots, coarsely chopped
  • 2 large celery sticks, coarsely chopped
  • 2 large leeks, coarsely chopped
  • 1 large zucchini, coarsely chopped
  • 3 garlic cloves, finely chopped
  • 1.75 litres vegetable stock
  • 2 cups cauliflower florets
  • 225g tomatoes, coarsely chopped

Instructions:
In a large saucepan, gently fry the onion and garlic in olive oil over medium heat until golden. Add carrots, celery, leeks, zucchini and cauliflower, and cook for 5 minutes. Add stock and bring to the boil. Reduce heat and simmer for 15 minutes. Add tomatoes and simmer until all the vegetables are tender.

Serves 3-4 servings. Ideal served with warm crusty bread.
