Salad Al Fresco

A crisp and refreshing summer salad using ingredients you can grow yourself! With vibrant colour and superb taste, this salad is not only tasty but also healthy too. We recommend it as an accompaniment to roast meats, fish or barbecue dishes.

Ingredients List:
  • 4 tomatoes cut into wedges
  • 1 red capsicum cut into strips
  • 1 yellow capsicum cut into strips
  • 1 cucumber sliced
  • 4 spinach leaves cut into strips
  • Lettuce leaves
  • 1 red onion, sliced into rings
  • 1/3 cup vinaigrette dressing

Instructions:
Gently toss the tomatoes, capsicums, cucumber and spinach together. Arrange the lettuce leaves on a serving dish, add the tossed vegetables and top with onion rings. Drizzle dressing over salad and serve. Serves 1-2.

Serve the salad lightly chilled and for best flavour, use the freshest possible ingredients.
